Healthy, Hearty, and Affordable: Paleo Sweet Potato Tacos Done Right

I made this simple recipe for hearty paleo sweet potato tacos after reading Two Meals a Day by Mark Sisson and being inspired to incorporate more Paleo meals into our diet!
Mark Sisson recommends eating only meats, healthy oils, dairy, eggs, vegetables, fruits, nuts and seeds. (Basically no grains, refined industrial seed oils, or sugars) We don’t always eat exactly this way, but we did for our one month cleanse last year! This meal checks off all the boxes, especially if you double check the ingredients list of your salsa and sour cream!
The simple switch from flour or corn tortillas to sweet potatoes incorporates a superfood, and make this meal a great grain free option.
I’ve been surprised by how much my family loves these, they ask for them all the time! They enjoy picking a variety of their favorite toppings, and I enjoy how little prep time it takes to throw these together.
This is a great recipe to serve guests since it’s naturally gluten free, and substitutions can easily be made for vegan or vegetarian friends and family. Switching the taco shell for sweet potato also makes these so much more filling than regular tacos!
How many servings does this recipe make?
Our favorite way to eat this meal is by serving each person a whole sweet potato with lots of toppings. When I make it, I bake 1 sweet potato per adult.
If you wanted to reduce the carbs a bit, you could easily use half a sweet potato as the taco boat instead, and bake 3 sweet potatoes for 6 adults instead.
If you choose the second way to prepare the sweet potato tacos, I would recommend making plenty of ground beef, or perhaps adding black beans as one of the toppings to make sure everyone gets plenty to eat!

How to make this recipe vegetarian or vegan:
To make this recipe vegetarian friendly, simply swap the ground beef for black beans!
To make it vegan friendly, swap the ground beef for black beans and leave out the sour cream and cheese.
Can I make Sweet Potato Tacos ahead?
Yes! This is actually a great meal to meal prep, or for leftovers. Just prepare the sweet potato and ground beef as you would normally. Then refrigerate them separately and reheat when you are ready to serve. Both sweet potato and taco meat reheat very well. I would prepare fresh ingredients close to the time you want to serve it.
How to serve for toddlers and infants

This is a rare dinner that my toddlers will actually eat well! It’s probably because there is a variety of options on the plate, and each child can fill up on their favorites.
For toddlers, I just plate up the meal with the ingredients separated out, since they prefer it that way. Their favorites are the sweet potato, ground beef sour cream, avocado and shredded cheese!
For infants beginning solids I would purée a portion of the sweet potato or avocado in my blender. As my children have gotten older, I just monitor what they can eat comfortably and adjust the preparation as needed.

Superfood Sweet Potato Tacos
Ingredients
- 6 Medium Sweet Potatoes
- 2 lbs Ground Beef
- 1 cup Shredded Cheese Cheddar or Mexican Blend
- 2 tbsp Taco seasoning store bought or homemade
Favorite Toppings
- 2 Ripe Avocados
- 2 Diced Roma Tomatoes
- 1 Diced medium onion
- 1 head romaine lettuce
- Sour Cream
- Salsa
Instructions
- Preheat the oven to 425℉. Wash the sweet potatoes and pierce all over with a fork. Bake in the preheated oven on a baking sheet for 45 minutes to 1 hour, or until the sweet potatoes are soft all the way through.
- While the sweet potatoes are baking, brown the ground beef on the stove. Season generously with taco seasoning.
- Dice the romaine lettuce, Roma tomatoes, onion, and avocado for the fresh toppings.
- When the sweet potatoes are cooked through, remove from oven, slice down the middle and mash the sides with a fork a little bit.
- Top with ground beef and all the fresh toppings and enjoy warm!
