Superfood Sweet Potato Tacos

These sweet potato tacos substitue regular taco shells for hearty baked sweet potatoes, making it paleo friendly, hearty, and full of nutrition!

Ingredients
  

  • 6 Medium Sweet Potatoes
  • 2 lbs Ground Beef
  • 1 cup Shredded Cheese Cheddar or Mexican Blend
  • 2 tbsp Taco seasoning store bought or homemade

Favorite Toppings

  • 2 Ripe Avocados
  • 2 Diced Roma Tomatoes
  • 1 Diced medium onion
  • 1 head romaine lettuce
  • Sour Cream
  • Salsa

Instructions
 

  • Preheat the oven to 425℉.
    Wash the sweet potatoes and pierce all over with a fork. Bake in the preheated oven on a baking sheet for 45 minutes to 1 hour, or until the sweet potatoes are soft all the way through.
  • While the sweet potatoes are baking, brown the ground beef on the stove. Season generously with taco seasoning.
  • Dice the romaine lettuce, Roma tomatoes, onion, and avocado for the fresh toppings.
  • When the sweet potatoes are cooked through, remove from oven, slice down the middle and mash the sides with a fork a little bit.
  • Top with ground beef and all the fresh toppings and enjoy warm!

Notes

This recipe is naturally gluten free, and can easily be made vegetarian or vegan friendly by substituting black beans for ground beef and leaving out the sour cream and shredded cheese.
